They open the same link and press Change, or reply to the email again. Their newest answer replaces the old one, and your count moves the moment it does.
You can change an answer yourself. Open the person's row on the event page and press Mark yes or Mark no, for when somebody tells you in person or at the door.
Once the event is over, nobody can answer any more, and Attendees records who came.
